Preparation Steps
- Steam the broccoli florets for 5 minutes until tender but still vibrant green. Drain thoroughly and chop finely. Pat dry with paper towels to remove excess moisture.
- In a large mixing bowl, whisk the beaten egg until frothy. Add the Greek yogurt and olive oil, creating a creamy base.
- In a separate bowl, whisk together the whole wheat flour and ground oats. Gradually fold the dry ingredients into the wet mixture.
- Add the cooled, chopped broccoli to your mixture and stir until evenly distributed. Using your hands or a small cookie scoop, form 24 small tots about the size of a walnut. Place them on a parchment-lined baking sheet, leaving space between each one.
- Preheat your oven to 375°F. Bake the broccoli tots for 15-18 minutes until the edges turn golden brown and they feel firm to the touch. Cool completely before serving.
Notes
Each tot contains approximately 25 calories. Serve 2-3 tots as training rewards or stuff into Kong toys. Can be frozen for extra crunchiness.
